Turkey Caesar Wraps

No one likes to cook in the summer. No matter how good your air conditioning is, a hot stove or oven seems to increase your kitchen's temperature by about 10 degrees. This little gem of a recipe I have to credit to The Honey's sister. She had gotten the idea off of kraftfoods.com , but then she fiddled with it a little. Then I got a hold of it and improved on it a bit more. The end result? Delicious!

Turkey Caesar Wraps

1 small head of green leaf lettuce, chopped
1/2 c. shredded carrot
1 medium tomato, diced
1/2 c. roasted red peppers, chopped
1 avocado, diced (optional)
2/3 c. creamy Caesar dressing
8 oz. deli-sliced turkey
5 or 6 large tortillas

In a large bowl, combine lettuce all ingredients. Mix well.

Lay a large tortilla on a plate. Fill with lettuce mixture.

Fold one side of the wrap to the middle.

Fold up the bottom.

Fold the other side in and secure with a toothpick if desired.
